First marinate the duck overnight.
Slice up shallots, galangal, ginger, lemon grass. Whole garlic.
Pound the ginger, galangal and lemon grass.
Have bay leave and cinnamon stick handy.
Cook the duck in the sauce n spices for 1.5 hrs.
Tada! All chop up and ready to be serve.
Chilli dip to go with the duck.
And salads and veges.
The duck sauce is so versertile and we had it for many days later with beancurd and hard boil eggs. Yumm!
I even kept a bottle in the freezer for future use.
